The simple answer is yes; we can make breakouts for just about anything, but there are some caveats.
Splitting an output to allow more devices to be plugged in does not increase the amount of power that the source output can provide. For example, the Alexa Mini's 7-pin EXT port can be broken out to provide power, remote start, and serial data, but the power output is limited to 1A. So yes, we can make a breakout that has 14 power outputs, but they are all going to share that 1A, which is about enough power for one small monitor.
Some data and digital AV signals cannot be split simply and will sometimes require integrated circuits (IC) or possibly can't be split at all.
